Italy has major differences in vegetation and climate that encourages forms of agriculture very diverse. These geographical differences means that there are some excellent cheeses from cow's milk in the north and goat cheese as good quait in the South. Northern Italians cook more butter and cream while the olive oil will dominate the South.
