Italy has major differences in vegetation and climate that encourages forms of agriculture very diverse. These geographical differences means that there are some excellent cheeses from cow's milk in the north and goat cheese as good quait in the South. Northern Italians cook more butter and cream while the olive oil will dominate the South. All Italians have in common lifestyle. It attaches today no less valuable than a good meal. The cuisine is based on respect for the basic product and a sense of fresh and quality. That's what makes it so lively and interesting.
